- ENA can be manufactured from any organic material containing sucrose, which is metabolized into ethanol. These include, rice, millet, barley, wheat and sugar cane (molasses).
- In recent years the demand for molasses has been spurred by its slightly lower price, however its pungent aroma is not suitable for all products, and grain derived ENA is preferred for drinks which require a neutral nasal note, such as vodka, whisky and gin.
